Wheat Germ Granola Bars

I have been making these bars for years and wanted to share them with my readers. They are healthy,  easily modified, and  ideal for a quick breakfast or a snack. They store well in an airtight container (after cooled) and freeze well. They are a cinch to make and can be enjoyed by Mommy and child! If you don’t like them too sweet, you can easily cut down on the brown sugar and/or honey. Feel free to add peanut butter or soy nut butter for added flavor and protein.

Kid Friendly Tips: Have your child “squeeze” the honey in (I usually eye ball the honey but it comes out to be about 1/3 cup). Your child can help “chop” the apples by pressing the button on a food processor (with supervision of course) or using a handy dandy chopper that I have which has a string that you can pull to chop (my little ones loves to do that). Other tips include helping measure out the ingredients and mixing everything together. A favorite part for my kids is putting in the raisins and chocolate chips (make sure that most of them go in the bowl instead of their mouth!).

Language Concepts: When making this recipe, you can focus on the texture and smell of the wheat germ and difference between the wheat germ, flaxseed and oats. Work on actions such as “mix”, “stir”, “fold” (folding in the chips and raisins), “whisk”, and “push” (pushing down the batter into the greased pan). Discuss food groups, various flavors, and encourage asking and answering “wh” questions. Encourage sequencing (steps of the recipe) and problem solving (oops, ran out of sugar, what can we substitute it with?). Help define and expand your childs vocabulary (e.g. flaxseed, wheat germ, oats, etc).

1 cup of whole wheat flour

2 cups of quick oats

1/2 cup of brown sugar

1/2 cup of toasted wheat germ

2 tablespoons of ground flaxseed

1/2 teaspoon of cinnamon

1/4 teaspoon of ground all spice

1 cup of cinnamon applesauce

1/3 cup of honey

1/4 cup of canola oil

1 egg beaten

2 teaspoons of vanilla extract

2 small apples cut up and finely chopped

1/4 cup of raisins

1/4 cup of chocolate chips

1. Preheat oven to 350 degrees.

2. Whisk flour through ground all spice in one bowl.

3. In another bowl mix applesauce through vanilla.

4. Fold in apples, raisins and chocolate chips.

5. Put batter into 8 X 8 greased square baking pan.

6. Bake for 20-22 minutes or until done.

7. Cut into squares and cool.

8. Enjoy! Store in an airtight container. These bars are even better the next day. I usually store them in the fridge so they stay fresh for longer.
