Vegan Chocolate Pancakes for Two

Looking for a satisfying recipe that is vegan? Are you out of eggs? Either one of those options could be something that will inspire you to try this recipe. I have been playing around with dairy free and vegan recipes lately due to a change in diet with my own child. I am a big lover of dairy but not all people can tolerate it so that is why I find it important to explore other ways of making satisfying baked goods. These pancakes came out sweet, moist and satisfying. The recipe can easily be doubled for more people. I like the smaller portions because many times you can be strapped for time, so flipping 6 or 7 pancakes may not be feasible.

Kid Friendly Tips: If your kids want to participate, there are many steps that they can help you out with. Since there are no raw eggs in the batter, your child can even try the batter! If your child doesn’t like chocolate, use vanilla soy milk instead and play around with adding different types of fruit (such as apple or strawberry). This recipe is meant to be flexible and can be a good starting point for different types of waffles.

Here is how I made it:

1/2 cup of white whole wheat flour (can substituted with white flour)
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of cinnamon
1/8 teaspoon of table salt

1/2 cup of chocolate soy milk
1/2 ripe banana mashed
3 tablespoons of raw cane sugar
1 tablespoon of canola oil
1 teaspoon of vanilla extract

1/4 cup of dairy free chips (mini chips work best!)

1. Combine flour through salt in a bowl. Mix with a whisk.

2. Combine milk through vanilla extract in another bowl with a whisk.

3. Add wet ingredients to dry ingredients until moistened. If you find the batter is too thick, add some more soy milk to it.

4. Fold in chips.

5. Pour batter onto non stick pan and flip until golden brown on each side. Yields 3 larger pancakes. Top with maple syrup!

Tip: While you are flipping pancakes keep the ones that are done on a cooling rack in the oven on low temperature. This will keep the pancakes nice, warm and crisp for when you are ready to serve.
