Marbled Cupcake with Ganache Glaze

I wanted to try a marble cupcake simply because I couldn’t decide between vanilla or chocolate. What I like most about these cupcakes is that you can easily make them whenever you want because you don’t need to wait for the butter to soften. Also, it can easily be modified to make them have a peanut butter flavor by adding peanut butter or toasted soy spread to the chocolate batter. You can also put a filling in such as Nutella which would make them extra yummy. Enjoy!

1.5 cups of all purpose flour

1.5 teaspoons of baking powder

1/4 teaspoon of salt

2 eggs

3/4 cup of sugar

1.5 sticks of unsalted butter melted

2 teaspoons of vanilla extract

1/2 cup of half and half or cream

1-2 tablespoons of cocoa

Ganache Glaze
1 bar of bittersweet chocolate (approximately 4 oz)

1/2 cup of heavy cream

2 tablespoons of butter

1 teaspoon of light corn syrup

1. Mix flour, baking powder and salt in one bowl with a whisk.

2. Beat sugar and eggs in another bowl.

3. Add butter and vanilla.

4. Alternate dry ingredients with milk starting and finishing with flour.

5. Take 1/3 of batter and set aside in another bowl. Add cocoa.

6. In cupcake pan, fill pan with vanilla batter evenly in twelve cups. Add a teaspoon of so of chocolate batter and use a toothpick to vanilla and chocolate together.

7. Bake for 10-12 minutes until done.

8. Let cool.

1. Mix chocolate, cream and butter in a microwave safe bowl. Melt in 30 second increments until melted. Add corn syrup.

2. Put in fridge until spreadable.

3. Spread evenly on cupcakes.

4. Enjoy!
