Instant Oatmeal for One

Are you sick of eating processed foods? After reading the nutritional content of my instant oatmeal packet the other morning, I decided to make my own instant oatmeal packet of ingredients that are simple and healthy. If you don’t have vanilla powder, just make it without it. If you don’t want the extra sugar, use an alternative sweetener or mix in some agave after microwaving it. I personally love adding some pure maple syrup in the oatmeal after microwaving it.

The recipe is for one packet, but double or triple the recipe for an easy breakfast in the morning for yourself or your kids. It is also easily adaptable and you can play around with the spices such as adding ground ginger or ground cloves to it.  I usually add my granola in at the end so it give the oatmeal a nice crunch. Other ideas for mix-ins include nuts, dried fruit or a banana.

1/2 cup of old fashioned oats
1 teaspoon of wheat germ
1 teaspoon of light brown sugar
Pinch of cinnamon and ground all spice
Pinch of salt
1/2 teaspoon of vanilla powder

1/4 cup of granola

1/2-3/4 cup of water or milk

1. Mix oats through vanilla powder  in a small bowl.

2. When you are ready to make the oatmeal, add enough hot water to cover the oatmeal mixture. If you like the oatmeal thick, add less water. If you like it thinner, add more water. I like to add the hot water and microwave it to get that thick texture to it. I usually microwave it for 45 seconds (after the hot water is added) but this will vary according to your microwave. If you microwave it too long, there might be an oatmeal mess so watch it while it’s cooking.

3. Mix and add the granola on top or other desirable mix-ins.
