Looking for a good GF recipe for your little ones? These muffins have a nice texture and are super moist. The mini chips give them some extra sweetness. Make these into mini muffins for an easy snack or breakfast. Have your child help with the measuring and adding the chips. The base of the recipe can be used for all different types of muffins like lemon blueberry (add 1-2 tablespoons fresh lemon juice and frozen blueberries in the batter instead of the chips), banana (add 1 mashed overripe banana) or a different fruit of your choice.

1 cup of sweet rice flour
1/4 cup of potato starch
1.5 teaspoons of GF baking powder
1/2 teaspoon of salt
1/2 cup of white sugar
1/2 cup of light brown sugar

2 eggs
1/4 cup of melted butter
1 tsp of vanilla
1 cup of GF yogurt (can be replaced with milk, almond milk or Kefir)
1/2 cup of mini chips

1. In one bowl mix the dry ingredients (flour through sugars)

2. In another bowl combine eggs through yogurt.

3. Gradually add wet ingredients into dry ingredients.

4. Fold chips into batter.

5. Add batter to greased muffin tins. Bake at 375 for about 10-12 minutes or until done.

6. Yields 12-15 mini muffins or 8 regular size muffins.
