Bran Cake Pops

I made these one morning after my daughter requested that I make my bran pancakes (which I will post soon). I was not in the mood to make the pancakes so I thought it would be fun to make these into cake pops. For kids, eating lollipops for breakfast is always a good thing! These cake pops are really healthy so it’s a good thing for everybody. I didn’t glaze these pops but they would be delicious with a glaze of confectioners sugar, milk and a little maple syrup. Enjoy!

3/4 cup of whole wheat flour

1/4 cup of unprocessed bran

1/4 cup of light brown sugar

1 teaspoon of baking powder

1/2 teaspoon of baking soda

1/4 teaspoon of salt

1/2 cup of raisins

1/2 cup of lowfat milk

1 egg

1 tbsp of canola oil

1 teaspoon of vanilla extract

1/2 teaspoon of maple extract

1. Mix flour, bran, baking powder, baking soda and salt with a whisk.

2. In another bowl mix remaining ingredients with a whisk.

3. Add wet ingredients to dry ingredients until moistened

4. Add batter to greased cake pop pan. Make about 10-12 cake pops.

5. Bake for about 8-10 minutes or until done.

6. Take a lollipop stick, dip it into maple syrup and then stick it in the cake pop.

7. Let cool and eat! You can glaze if you wish or have it by itself. Tastes like a bran muffin but its more fun on a stick 🙂
