Overnight Quinoa Flour Pancakes

quinoa pancakesDo you want to add some extra protein in your diet? Do you have a child that needs more protein during breakfast? Try these pancakes for breakfast one day. The pancakes are super flat and almost resemble crepes. Quinoa flour has a distinct taste so I decided to mix in whole wheat flour to balance the flavors. If you love the taste of quinoa, you will like these pancakes. If your child has never had it, I might use 1/4 cup of quinoa flour  and 3/4 whole wheat flour. I add some pure maple syrup in the batter to add some sweetness to the pancakes. Serve these with fruit and/or yogurt. Make these dairy free by substituting the butter for soy butter.

Tip: Try to get these as flat as possible in the pan. The result will be better pancakes!

Kid Friendly Tips: Have your child smell the quinoa flour and ask them to describe what they smell. Have them pick some appropriate spices to add to the pancakes (you can add ground all spice, nutmeg, cloves, pumpkin spice, ginger…….). Experiment and have fun. 2 eggs

1 cup of vanilla almond milk

1/2 cup of quinoa flour

1/2 cup of whole wheat flour

1/2 teaspoon of salt

1/2 teaspoon of cinnamon

1/4 teaspoon of ground all spice

1 tablespoon of melted unsalted butter (can be substituted with soy butter)

1 teaspoon of vanilla extract

1 tablespoon of raw sugar (can be substituted with granulated sugar)

1 tablespoon of pure maple syrup

1. The night before blend two eggs for 15 seconds in a blender. Add almond milk. Puree.

2. Add flours and puree.

3. Add salt, cinnamon, ground all spice, butter, vanilla, sugar and maple syrup.

4. Puree.

5. Stick in fridge overnight.

6. The next morning, pour batter onto nonstick pan. Make sure to spread thin as much as you can to make crispy. Flip until brown on each side.

7. Add maple syrup, jam or apple butter. Serve with fruit. Read pancake books!!!
