Dairy Free Overnight Oatmeal Bread with Chia

Are you dairy free? Are you looking for a healthy breakfast or some good ideas for a lunchbox? Try this overnight oatmeal bread with chia seeds. Want to add dairy? Substitute the almond milk with low fat buttermilk! Want to reduce the sugar? Use unsweetened almond milk instead of vanilla almond milk. This bread is slightly sweet (add more sugar if you like it sweeter!), filling and full of nutrients. The bread is easy to prepare in the morning with some of the prep work already done the night before. Teach your child about the healthy ingredients in the bread like whole wheat flour, chia seeds, applesauce and apples. Does your child dislike apples? Substitute mashed ripe bananas instead. Ingredients:

The night before:

1 cup of old fashioned oats
1 cup of vanilla almond milk
1 teaspoon of chia seeds
The next morning:

1 cup of whole wheat flour
1/2 cup of white flour
1 teaspoon of baking powder
2 teaspoons of baking soda
1/2 cup of light brown sugar
1/2 teaspoon of cinnamon and 1/4 teaspoon of ground all spic

2 eggs
1/4 cup of canola oil (I used blend of canola and coconut)
1/4 cup of applesauce

1 teaspoon of vanilla extract
1 apple diced
maple syrup for drizzling (optional)

1. The night before measure 1 cup of vanilla almond milk in a glass measuring cup. Add 1 cup of old fashioned oats and 1 teaspoon of chia seeds. Mix until combined. Cover with saran wrap or cover and let sit overnight in the fridge.
2. The next day: Preheat the oven to 350 degrees. Grease one standard loaf pan or two mini loaf pans.
3. In one bowl combine flour through cinnamon and ground all spice. Stir with a whisk.
4. In a separate bowl, combine eggs, canola oil and applesauce. Add the soaked oats to the mixture. Mix until combined.
5. Add oat/egg mixture to flour mixture. Mix until combined.
6. Add the diced apple and vanilla extract.
7. Pour batter into the greased loaf pan. Drizzle with maple syrup.
8. Bake for 35-40 minutes or until done. The time will vary depending on the size of your loaf pan (mini loaves will take less time)
