Brownie Cake Pops

I made these delicious brownie pops after an issue with my brownies sticking to my pan. The brownies tasted great but they had stuck to the pan and didn’t look presentable. At first I was really disappointed but then thought, “What can I do with this?”. “Cake Pop!”. The brownie pops looked fun, neat and inviting. They taste sweet and decadent. They are also easy to make because I used store bought frosting which saved time. I brought them to my friends party and the kids ate them up in no time. Next time if your cake has an issue sticking to the pan, think “Cake Pop!”

Here is how I made it:

Brownies:
1/2 cup white sugar

2 tablespoons butter

2 tablespoons water

1 1/2 cups semisweet chocolate chips

2 eggs

1/2 teaspoon vanilla extract

2/3 cup all-purpose flour

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 cup of semisweet chocolate chips (melted when ready to dip stick into cake pop)

Store bought chocolate frosting and decorations

1. In a saucepan melt butter, water and sugar until it comes to a boil.

2. Take off heat and add chocolate chips. Mix until melted.

3. In a separate bowl mix eggs and vanilla. Add a teaspoon of chocolate mixture to egg.

4. Add egg mixture to chocolate mixture and mix well until smooth and shiny.

5. In a separate bowl mix flour, baking soda and salt.

6. Add flour mixture to chocolate mixture.

7. Pour mixture into 8 X 8 pan. Bake for 20-25 minutes or until done at 350 degrees.

8. Cool and crumble brownies.

9. Add half of a can of chocolate frosting to brownie crumble. Shape into balls the size of munchkins. Dip lollipop stick in melted chocolate and then stick the ball on the stick. Lay on wax paper on a cookie sheet.Repeat until cake pops are all complete. Refrigerate for an hour or two until firm.

10. Put the can of frosting in the microwave for 30 seconds or until melted.

11. Dip the cake pop into the melted frosting mixture. Stick the pop in a Styrofoam block. Add sprinkles. When all cake pops are done add sprinkles. Put in fridge until about 30 minutes before serving.
