Almond Apple Cake

This almond apple cake is to die for! After our annual apple picking day, my mother in law was craving apple cake. We decided to make this cake together. I remembered seeing this amazing recipe for apple cake on The Kitchn. I thought for sure that I had yogurt at home but all I had was almond yogurt and almond milk. I have known from my past experiences that almond yogurt mixed with almond milk makes an excellent replacement for regular yogurt. Since almond yogurt is super thick, combining it with the almond milk makes it the right consistency. This apple cake was moist, sweet and absolutely delicious. It’s perfect for Thanksgiving or any day! When taking a picture of this apple cake, my mischievous basset hound decided to get in on this cake by jumping on the table and grabbing more a large portion of this cake. Let’s just say, she has a sweet tooth as well. It’s a good thing I froze a couple of slices………Freezes well 🙂

Make dairy free by replacing the butter with soy butter. Easy!

2 containers of 6 oz of vanilla almond milk yogurt + 1/4 almond milk (will equal 1.5 cups). Almond milk can be any kind (vanilla, unsweetened, etc)
1/3 cup extra virgin olive oil
1/4 cup applesauce
1/2 lemon, juiced
1 cup sugar
3 large eggs
1 1/2 teaspoons vanilla extract or vanilla bean paste
4-5 small apples, peeled and diced
2 1/2 cups all-purpose flour
2.5 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons of apple pie spice blend

3/4 teaspoon of cinnamon
1/2 cup brown sugar
2 tablespoons unsalted butter, softened (can be replaced with soy butter for dairy free recipe)

1 tablespoon of caramel (optional)

1. Preheat oven to 350 degrees and grease a cake pan (I used a pyrex a bit smaller than 9 X 13)

2. In a bowl combine yogurt mixture, oil, applesauce, lemon, sugar, eggs and vanilla. Set aside.

3. In another bowl combine flour, baking soda, baking powder, salt and apple spice blend.

5. Add wet ingredients to dry ingredients. Mix until moistened.

6. Fold in apples.

7. In a small bowl, combine cinnamon, brown sugar, and butter.

7. Pour half of apple mixture into pan.

9. Sprinkle the batter with half of the brown sugar mixture. With a butter knife, swirl the sugar mixture inthe batter.

9. Pour rest of apple batter on top. Sprinkle rest of brown sugar mixture on top. Swirl with a butter knife.

8. Bake for 40-50 minutes or until done. If desired, drizzle caramel on top of the cake.
9. Frost if desired or eat as is!
