30 Minute Whole Wheat Waffles

30 minute waffleHave some wheat germ and whole wheat flour on hand? Have an extra 30 minutes in the morning?

I found an interesting recipe on foodnetwork.com that got very good reviews and wanted to try it myself. I tend to stick with whole wheat flour so decided to give this waffle a healthy makeover by substituting the white flour with whole wheat, adding wheat germ and substituting canola oil instead of vegetable oil. The waffles were crunchy, sweet and moist. The moistness had to do mostly with letting the batter sit for a good thirty minutes on the counter before adding them to the waffle iron. My kitchen was cool because its winter but if you live in a warmer climate you might consider sticking it in the fridge to let soak. I also added some of my own spices which gave it even more depth. Waffles are a tricky thing to achieve the moistness without all of the fat. Try this waffle recipe for a weekday or weekend breakfast. Yum!

Kid Friendly Tips: Get your child involved by helping them with measuring and combining the ingredients. Have them add their own spices that they like. You can try some nutmeg, pumpkin pie spice or ginger for a different type of flavor. Set timer and work on numbers with timer.

Top with maple syrup or for extra sweetness, spread some biscoff or cookie spread. Yum!

Ingredients:
3/4 cup of whole wheat flour

1/4 cup of cornstarch

1/2 teaspoon of table salt

3 tablespoons of toasted wheat germ

3 tablespoons of light brown sugar

1 teaspoon of baking powder

1/2 teaspoon of baking soda

1/2 teaspoon of cinnamon

1 cup of low fat buttermilk

dash of ground all spice

1 egg

1/3 cup of canola oil

1/2 teaspoon of maple extract (can substitute with 1 tablespoon of maple syrup and reduce sugar)

1 teaspoon of vanilla extract

1. Mix whole wheat flour, cornstarch, wheat germ, baking powder, baking soda, spices and salt in one bowl. Whisk.

4. In another bowl mix buttermilk, oil, extracts and egg.

3. Add wet to dry ingredients. Let sit on counter top for 30 minutes. If your room is exceptionally hot you may consider putting it in the fridge for food safety reasons.

4. Get waffle maker ready. Add batter to waffle maker. Makes about 4 waffles.
